The menu is designed around healthy Mediterranean diet of southern Europe. The “no butter policy” takes top precedence as the extra virgin olive oil has completely substituted butter and other unhealthy fats in the kitchen. In addition, Reef’s priority is that fish, shellfish, meats and other ingredients are always fresh and of the highest quality. Dishes are prepared with healthy Mediterranean portions in mind, with quality and taste as priorities and always light enough to leave room for desserts.

This species is taken by commercial and artisanal longline and gillnet fisheries throughout its range. It is valued for meat, leather, liver oil and fishmeal. The Caribbean reef shark is the most common shark landed in Colombia (accounting for 39% of the longline catch by occurrence), where it is utilized for its fins, oil and jaws (sold for ornamental purposes). In Belize, this species is mainly caught as bycatch on hook-and-line intended for groupers and snappers; the fins are sold to the lucrative Asian market and the meat sold in Belize, Mexico, and Guatemala to make "panades", a tortilla-like confection. A dedicated shark fishery operated in Belize from the mid-1900s to the early 1990s, until catches of all species saw dramatic declines. The flesh of this species may contain high levels of methylmercury and other heavy metals.
While scientists are still trying to determine exactly how many of theses species exist, we do know that many of these sharks lose their lives from getting caught in fishing nets. Not only does it significantly reduce their population, it compromises the fragile ecosystem around coral reefs. Many new laws and regulations are being put into place to protect this ever important fish.
The International Union for Conservation of Nature (IUCN) has assessed the Caribbean reef shark as Near Threatened; its population has declined off Belize and Cuba from overfishing and exploitation continues in other regions. They are also threatened by the degradation and destruction of their coral reef habitat. Commercial fishing for this species is prohibited in United States waters. They are protected in the Bahamas due to their significance to ecotourism, as well as in a number of Marine Protected Areas (MPAs) off Brazil and elsewhere. However, enforcement against illegal fishing is lacking in some of these reserves, and many areas in which this species is abundant are not protected.
These sharks prefer the shoreline from Florida to Brazil. This is where it gets the common name from. The tropical parts of the western Atlantic Ocean is home to this variety of sharks. Normally found on the outer edges of reefs, the Caribbean Reef Shark prefers to live in coral reefs and its shallow waters as well as continental shelves and insular shelves. These sharks are found quite commonly at a depth of about 100 feet (30 meters) and are known to dive to incredible depths of around 1250 feet (380 meters).
They are also found in mangrove areas, moving in and out with the tide and even in fresh water near the sea. They occur singly or in small groups. Adults often aggregate in reef channels at low tide. This is one of the three most common reef sharks in the Indo-Pacific, the two others are the grey reef shark, Carcharhinus amblyrhynchos and whitetip reef shark, Triaenodon obesus.
Sandbar shark (C. plumbeus): The sandbar shark has a snout that is shorter than the width of its mouth and a large first dorsal fin originating over the axis of the pectoral fin (the Caribbean reef shark’s first dorsal fin is further from the head than the sandbar shark). Unlike the Caribbean reef shark, the sandbar shark has widely spaced non-overlapping dermal denticles that lack defined teeth on their free edges.
